CABERNET SAUVIGNON

Cabernet Sauvignon is a medium to full-bodied, densely-colored wine, rich in berry flavor. A true Cabernet Sauvignon is unblended, austerely tannic, and characterized by the flavors of dark cherry, cedar, tobacco, and black currant. Cool climate growth can give green pepper or olive flavors.  Up to 18 months of aging in small oak barrels before bottling Cabernet is common in order to achieve more complexity. 

Cabernet's complexity melds brilliantly with other grapes. When blended with the Merlot grape for instance, a softer and more subtle Cabernet emerges without surrendering its essential character.
